Winemaking focuses on gentle handling of fruit, minimal movements of wine and slow maturation in cool cellar environments. The strength of the site is Chardonnay and Merlot Cabernet blended reds.
Fruit parcels are hand-picked and pressed directly to barrel, in the case of Chardonnay, and de-stemmed to open fermenters for reds. Most fermentations are natural and malolactic fermentation happens in barrel.
